Salmon with Pecan Honey Glaze

Make your New Year's Resolution easy! This healthy salmon recipe is delicious and filled with protein, healthy fats, and omega-3 fatty acids. You don't need to wait for the New Year, this tasty recipe is perfect all year round.

Ingredients

  • 1 cup Renfroe Pecan halves or pieces
  • 1 cup honey
  • 3/4 cup butter
  • 1/4 cup vegetable oil
  • 4 salmon fillets about 4 oz. each
  • salt to taste
  • black pepper to taste

Instructions

  • Preheat oven to 400°F.
  • Spread Renfroe Pecans evenly on a baking sheet. Toast for 8 to 10 minutes, or until evenly brown and fragrant.
  • Heat honey with half of the butter. Stir in Renfroe Pecans and cook for 8 to 10 minutes to infuse the flavors. Remove from heat and keep warm.
  • Melt remaining butter with oil in a large skillet over high heat. Season fish with salt and pepper. Place in skillet and cook until firm to touch, about 4 to 5 minutes per side. Salmon is done when it flakes easily with a fork. Transfer to a serving plate and serve!
