• 2 cups sifted flour
• 1 tsp. baking soda
• 1/2 cup brown sugar
• 1 cup pecans
• 1-1/2 mashed ripe bananas
• 1 beaten egg
• 2-1/2 tbsp. vegetable oil
• 1 tsp. vanilla extract
• 1 cup crushed pineapple (in unsweetened pineapple juice)
• 2 cups sifted flour
• 1 tsp. baking soda
• 1/2 cup brown sugar
• 1 cup pecans
• 1-1/2 mashed ripe bananas

• 1 cup crushed pineapple (in unsweetened pineapple juice)
1. Preheat oven to 350°F.
2. Stir together flour and baking soda in a bowl. Add brown sugar and mix well.
3. Combine egg, oil and vanilla. Add to dry ingredients. Mix until moistened.
4.Mix together bananas and pineapple (with juice). Add to batter.
5. Fold pecans into batter.
6. Spread evenly in a greased loaf pan. Bake for 45 minutes, or until done. Cool before slicing.
