Apricot Oatmeal Bars

Easy to prepare and designed to make a small amount, these squares are a marvelous blend of flavors. It's a dessert that can be stirred up in no time to satisfy a sweet tooth.


• 1-1/2 cups flour

• 1/2 tsp. salt

• 1/2 tsp. baking soda

• 1/2 cup regular oats

• 1 cup brown sugar

• 1 cup finely chopped pecans

• 3/4 cup butter, melted

• 12 oz. jar apricot jam


1. Preheat oven to 375°F

2. Sift flour, salt and baking soda together

3. Add sugar, oats, pecans and melted butter

4. Press 2/3 of mixture into a 9" square pan

5. Cover with jam

6. Top with remainder of oatmeal mixture

7. Pack gently

8. Bake for 30 minutes (top should be browned)

9. Cool and cut into squares
