Wild Rice and Chicken Salad

This refreshing chicken and wild rice salad makes a tasty lunch or dinner. Because this dish is filled with chicken and pecans, this is an excellent high protein meal prep recipe that will give you energy for your work week.


Ingredients

• 3-1/2 cups cubed & cooked chicken

• 4-1/2 oz. can chopped ripe olives, drained

• 1/2 cup chopped green onions with tops

• 1/2 cup Renfroe Roasted & Salted Pecans

• 1 cup chopped celery

• 1-1/2 cups mayonnaise

• 12 oz. long grain & wild rice mix (cook according to directions - add no seasonings)

Salt

Black pepper

Directions

1. Combine chicken, olives, onions, pecans, celery and mayonnaise. Add to cooked rice. Mix well.

2. Season with salt and pepper to taste. Chill before serving.
