Pecan Pie Squares

These pecan pie bars are fun and easy to make! They're perfect for fall bake sales, Halloween, Thanksgiving, and other autumn-based events.


Ingredients

Ingredients for Crust

• 3 cups all-purpose flour

• 1/4 cup + 2 tbsp. sugar

• 3/4 cup softened margarine

• 3/4 tsp. salt

Ingredients for Filling

• 4 eggs, slightly beaten

• 1-1/2 cups light corn syrup

• 3 tbsp. melted margarine

• 1-1/2 cups chopped pecans

• 1-1/2 cups sugar

• 1-1/2 tsp. vanilla extract

Directions

Crust

1. Combine tomatoes, basil, oil, lemon juice and garlic in a bowl. Marinate at room temperature for 20 minutes.

2. Stir in rice and cooled chicken strips. Fold in 1/2 cup pecans.

3. Spoon salad into center of serving plates and surround with greens. Use remaining 1/4 cup pecans to top each serving.
