1. Preheat oven to 350°F.
2. Combine brown sugar, butter, egg and vanilla in a large bowl. Beat at medium speed until creamy.
3. Reduce speed to low. Add flour and baking powder. Beat until well mixed.
4. Shape dough into 1-1/4" balls and place 2" apart on cookie sheets. Make an indentation in each cookie with your thumb (rotate thumb to hollow out slightly).
5. For filling, combine all filling ingredients in a small bowl.
6. Fill each cookie with filling. Bake for 12 minutes or until lightly browned. Allow to cool 1 minute before removing from sheets.
