• 1 cup all-purpose flour
• 1 tsp. baking soda
• 1 tsp. cinnamon
• 1/4 tsp. ginger
• 1/4 tsp. nutmeg
• 1 egg
• 1/2 cup dark molasses
• 1/4 cup peanut oil
• 2/3 cup 100% bran
• 1/2 cup sugar
• 1/2 cup hot water
• 1 cup pecan pieces
• 1 cup all-purpose flour
• 1 tsp. baking soda
• 1 tsp. cinnamon
• 1/4 tsp. ginger
• 1/4 tsp. nutmeg
• 1 egg
• 1/2 cup dark molasses
• 1/4 cup peanut oil
• 2/3 cup 100% bran
• 1/2 cup sugar
• 1/2 cup hot water
• 1 cup pecan pieces
1. Preheat oven to 350°F.
2. Combine flour, baking soda, cinnamon, ginger and nutmeg in a small bowl. Set aside.
3. With an electric mixer at medium speed, beat egg, molasses and oil together in a large bowl. Blend well. Stir in bran, sugar and hot water until blended. Add flour mixture, a little at a time, beating well after each addition. Stir in pecans.
4. Pour into muffin tins lined with baking cups. Bake for 20 to 25 minutes, or until done.
