Divinity Microwave

Divinity is a nougat-like candy topped with pecans and a favorite dessert among Southerners. This light and airy delicacy must be made on a cool, dry day for best results.


4 cups sugar

• 1 cup corn syrup

• 1/4 tsp. salt

• 3/4 cup water

• 3 egg whites

• 1-1/2 tsp. vanilla extract

• 1 cup chopped pecans


1. Mix sugar, corn syrup, salt and water together in a 1-1/2 qt. saucepan. Cook over medium-high heat for 20 to 22 minutes, or until mixture reaches hard ball stage. Stir only twice during cooking.

2. Beat egg whites until stiff. Gradually pour hot mixture from saucepan over beaten egg whites and beat on high until mixture begins to lose its gloss and thickens (12 minutes, sometimes longer). Mix in vanilla and pecans.

3. Drop by tablespoonfuls onto waxed paper.

Note: You need a cool, dry day for best results.
